What kind of chocolate do you have to use for tempering?

I ask this because when i dont temper, it MELTS in my hands, so i want to temper it from now on.
Which kind do i have to use? do i use those humongous gourmet organic choclate bars? or like, godiva or something? its so confusing.
and cant i just use store bought chocolate, and melt it slightly to make it keep the temper instead?
please dont answer if u do not know anything about tempering chocolate because im asking a serious question im not asking which chocolate melts the fastest..

Real chocolate needs to be tempered. Real chocolate is 50% to 60% cocoa butter. Tempering real chocolate makes it shiny and keeps it from getting the whitish look. If you do not wish to temper the chocolate you can add some paraffin to it and it will give it a sort of shine.
Confectioners coating is chocolate which has had the cocoa butter removed and palm kernel oil added. The palm kernel oil does not separate so the confectioners coating does not have to be tempered.
If the chocolate you purchase has had anything added to it…such as chocolate chips do,…you cannot temper it. You must purchase only chocolate which is true chocolate and has not been altered.
